And follow along on social media with #virtualpumpkinparty.<\/p>\n<p>This little pumpkin dish I\u2019m going to share with you guys today sums up all the things I have been craving in one bowl. Cheesy grits with pumpkin puree mixed in for an autumnal and nutritional boost \u2013 so good! Potatoes, sweet potatoes and a cute little sugar pumpkin get roasted with a bit of pumpkin pie spice and cayenne pepper \u2013 I must\u2019ve eaten half the pan before taking pics, talk about addicting! And then yes, put an egg on all that! Eat it for breakfast or lunch and even dinner for that matter, I know I\u2019ll be making it at least once a week during this fall season!<\/p>\n<p>Happy pumpkin party day my friends! AND a big thanks to <a title=\"http:\/\/cakeoversteak.com\" href=\"http:\/\/cakeoversteak.com\" target=\"_blank\">Sara<\/a> for hosting this amazing celebration! Oh and I\u2019ll be taking the next two weekends off from blogging to prep and host the baby shower! But I\u2019ll be back with a full report on how it all went down, what we ate and hopefully some pictures too!<\/p>\n<h3>Ingredients for the Pumpkin Home Fries<\/h3>\n<ul>\n<li>1 small sugar pumpkin<\/li>\n<li>1 large sweet potato<\/li>\n<li>a few baby dutch potatoes, or similar yellow potato<\/li>\n<li>1\/2 red onion<\/li>\n<li>1 teaspoon pumpkin pie spice<\/li>\n<li>1 teaspoon cayenne pepper<\/li>\n<li>a good sprinkling of salt and pepper<\/li>\n<li>a couple tablespoons of olive oil<\/li>\n<\/ul>\n<h3>Directions<\/h3>\n<p><em>Cube all the veggies into 1\/2 pieces. Finely chop the onion. Place everything on baking sheet and coat with oil and spices. Bake in preheated oven at 400F for 15 to 20 minutes or until tender. While the veggies roast, cook the grits.<\/em><\/p>\n<ul>\n<li>1 cup of stone ground grits<\/li>\n<li>1\/2 cup of shredded cheddar cheese<\/li>\n<li>1\/2 cup of pumpkin puree<\/li>\n<li>1\/2 cup of milk<\/li>\n<li>1 tablespoon of butter<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>3 cups water<\/li>\n<\/ul>\n<h3>Directions <\/h3>\n<p>Bring the water, butter and salt to a boil. Gradually stir in the grits, let the water return to a boil, then turn heat all the way down and cook covered for 15 to 20 minutes, stirring frequently. Add the pumpkin, milk and cheese and stir frequently for another 5 to 10 minutes.<\/p>\n<blockquote><p>Top with a fried egg and thyme for garnish.<\/p><\/blockquote>\n<h4>So many pumpkin recipes, you guys!
